Sweet Summer Snack: Stewed Bananas



This classic Filipino merienda dish is one of my favourites, and I just thought it would be nice to share the recipe with you all, since it's simple and very cheap to make.

SWEET STEWED BANANAS

-10 semi-ripe cooking bananas (saba)
-2 cups brown sugar
-4 cups water
-3 cups sago pearls
-Pandan Leaves

1. Wash the bananas and peel them - their peels are kinda tough, so you might need the help of a knife in this one.
2.Slice each banana diagonally into bite-sized pieces.
3. In a sauce pan over fire, add half a cup of brown sugar and then pour 1 cup of water just before the sugar caramelises. The sugar will harden, so just leave it to melt and boil.
4. Add the bananas into the boiling sugar mixture, as well as the remaining 3 cups of water and 3 and a half cups of brown sugar.
5. Place a few pandan leaves into the stew for aroma.
6. Pour in the sago pearls - wash them first by soaking them in boiling water to kill bacteria.
7. Leave to boil for a few more minutes until the bananas are soft enough to bite.
8. Serve chilled or with crushed ice.

*This merienda dish is also great for rainy seasons, as you can serve them warm :)
